Parmesan and Truffle Chips
Serves up to 4
Ingredients:
400g potatoes
2 tsp White Truffoil Concentrate / 2 tbsp White or Black Truffoil
12 g grated Parmesan cheese
Truffle Salt
Oil for frying
Instructions:
Cut the potatoes into julienne using a mandolin.
Wash the potatoes 3 times to wash the starch off, then drain the chips well.
Fry the potatoes in hot oil (170°C) for 2 minutes, remove them, let them drain and cool slightly, then fry them again until they turn golden brown; drain well.
Sprinkle with a bit of Truffle Salt and toss well.
Just before serving, add the Truffoil and Parmesan cheese.
