Tartufo Cocktail
Ingredients:
60 ml dry gin
30 ml freshly squeezed lemon juice
1 tbsp Honey&Truffle syrup (mix the Honey&Truffle and warm water on a 1:2 ratio)
2 rosemary sprigs
70 ml soda water
Instructions:
Stir together the gin, lemon juice, and honey syrup in a cocktail shaker, until the honey dissolves completely.
Slap 1 rosemary sprig or gently pinch it to release the oils and add to the shaker.
Fill the shaker with ice, and shake vigorously until the cocktail is well chilled.
Strain through a sieve into an ice-filled highball glass.
Top with soda water, and stir gently.
Garnish with the remaining rosemary sprig.
